Thai Pineapple Curry

About the Recipe

Curry is the perfect dish to adapt if you have a random bunch of ingredients.

Ingredients

Main:

  • 1 tablespoon coconut oil or vegetable oil

  • 2 shallots sliced thin

  • 4 cloves garlic minced

  • 1 inch ginger finely chopped

  • 3 tablespoon Thai red curry paste homemade or store bought

  • 1 cup protien. (Optional)

  • 1 cup sliced pineapple

  • 1 cups diced bells pepper

  • 1 14 oz can full fat coconut milk

  • 1/2 cup vegetable broth or water

  • 1 tablespoon fish sauce

  • 1/2 cup toasted peanuts crushed or chopped

  • 1/2 cup fresh cilantro chopped

Garnish:

  • 1/2 cup dry roasted peanuts

  • 1/2 cup Fresh cilantro , chopped

Preparation

  1. Heat oil over medium heat.

  2. Fry sliced shallots(onion) in oil until soft.

  3. Add fresh ginger and garlic mince to the pot and cook until fragrant.

  4. Fry Thai red curry paste fry until oil separates from the sides of the pan.

  5. Add in Protien *optional.

  6. Add Pineapple.

  7. Add bell pepper.

  8. Add coconut milk and vegetable broth.

  9. Cover partially and simmer on low heat for 8 minutes.

  10. Stir the curry occasionally.

  11. Remove pan from heat.

  12. Add everything else and half your garnish and give one final stir.

  13. Serve hot with rice.

  14. Garnish remaining toasted crushed peanuts and cilantro before serving.
