Ingredients

Main:

  • 8 ounces flat rice noodles

  • 3 Tablespoons oil

  • 3 cloves garlic , minced

  • 8 ounces tofu

  • 1 red bell pepper thinly sliced

  • 2 eggs

  • 1 cup fresh bean sprouts (optional for crunch)

Sauce:

  • 3 Tablespoons fish sauce

  • 1 Tablespoon low-sodium soy sauce

  • 4 Tablespoons light brown sugar

  • 2 Tablespoons rice vinegar

  • 1 Tablespoon Sriracha hot sauce

  • 2 Tablespoons creamy peanut butter

Garnish:

  • 3 green onions , chopped

  • 1/2 cup dry roasted peanuts

  • 2 limes

  • 1/2 cup Fresh cilantro , chopped

Preparation

  1. Cook your noodles

  2. Drop your noodles into ice water

  3. Put oil in pan

  4. Add garlic to pan and cook until aromatic

  5. Add Tofu

  6. Add red bell pepper

  7. Add bean sprouts

  8. Strain noodles and add into pan

  9. Create a circle in pan and scramble egg

  10. Combine sauce ingredients and add to pan

  11. Cook until desired doneness and add garnish
